Favorite Gluten-Free + Vegan Granola

Ingredients

Thyme Shortbread

  • 3 cup whole rolled oats

  • 2 cup corn flakes (arrowhead mills)

  • 2 tbsp chia seeds

  • 1 tbsp sesame seeds

  • 1 3/4 cup pumpkin seeds or pepitas (unsalted)

  • 1 cup unsweetened coconut flakes (optional)

  • 1/4 cup maple syrup

  • 1 tbsp coconut sugar

  • 1/2 tsp vanilla extract

  • 1/4 tsp ground cinnamon

  • dash ground clove

  • 1/8 tsp salt

  • 1/4 cup neutral oil

Method

  1. Pre-heat the oven to 325°. Then, prepare a baking sheet be lining it with parchment paper. and set aside.

  2. In a large bowl, combine the oats, corn flakes, all seeds and spices.

  3. In a small bowl whisk and combine the maple syrup, coconut sugar, vanilla extract, salt and oil. Then, pour the wet mixture evenly atop the oat mix. Using a spoon, rubber spatula or even hands—mix until homogenous.

  4. Pour the granola atop the prepared baking pan. Next, using the same spatula or spoon, smooth the granola into a flat layer—so it may bake evenly. Bake the granola for 35-40mins. Half way through, using a fork toss the granola about . until it’s golden-brown.

  5. The granola should be fragrant. Allow to cool and rest on a wire rack until fully cooled, about 45mins-1hr.

  6. Serve with yogurt or enjoyed with your desired milk. Enjoy!
