Toasted Pasta Caesar Salad with Salmon
dressing
Ingredients
4-6 cloves garlic
1 tbsp capers (with juice)
2 tsp Worcestershire sauce
1 tbsp champagne vinegar
1 tsp dijon mustard
1 tsp maple syrup
3/4 c-1 c lemon juice
4 anchovies
1/2 c olive oil
Fresh ground pepper

Method:
To a blender, add all the ingredients. Pulse to combine. The dressing should be smooth in texture. Set aside.
Toasted Pasta
Ingredients
1 1/2 c gemelli pasta
1/4 c olive oil
Salt + pepper to taste
Bread crumbs (optional)
Method
Line a baking sheet with parchment or aluminum foil. Set aside.
To a boiling pot of water—add a large pitch of salt. Add in and cook the pasta for half of the designated time (about 6mins for gemelli). Remove for heat and strain the pasta. Allow the pasta to dry and cool for 5-10mins.
Pre-heat the oven to 375°.
In a medium bowl, add the pasta, olive oil, salt and pepper. Using your hands or spoon, give the pasta a toss to coat evenly. Pour the pasta atop the prepared pan. Make sure it’s laid flat and not bunched together. Place in the oven to bake for 15-18mins—give it a little shake about half way through—to allow even toasting. Once golden-brown, remove from the oven and place on a cooling rack to cool.

Ingredients
4 filets Salmon
1/2 c olive oil
1 tbsp garlic powder
Salt + pepper to taste
Method
Line a baking sheet with parchment or aluminum foil. Drizzle the base with a bit of olive oil. Set aside.
Pre-heat the oven to LOW broil (400°).
Wash and pat dry the filets. Add the salmon to the prepared pan. Equal cover the filets with the garlic powder, salt and pepper. Place the pan of salmon into the oven for 8mins. After they become opaque in appearance, turn the oven to HIGH broil (550°) for 4-6mins. After the filets are golden—remove and allow to rest for 5mins before plating.

Method
Thoroughly wash and pat dry the greens. Assemble the salmon, Parmesan and toasted pasta. Top with desired amount of dressing, spritz with some fresh lemons. Enjoy!
Chef Note: If desired, add the breadcrumbs to the toasted pasta 5mins before it’s finished cooking. Stored ingredients separately—in an airtight container for up to 3 days.
